Sausage rolls with 01 Pilsner Spent Grain Flour

Ingredients

5 dl lukewarm water

50 g yeast

100 g 01 Pilsner Spent Grain Flour 

800 g wheat flour

50 g sugar

15 g salt

75 g soft butter

1 egg

Sausages, (brunch or barbecue sausage that you cut)

Here's how

  1. Dissolve the yeast in the water.
  2. Mix 01 Pilsner Spent Grain Flour, wheat flour, sugar and salt together.
  3. Then add half of the flour mixture to the water and stir it well.
  4. Add the egg to the batter and stir it into the batter.
  5. Add the rest of the flour mixture a little at a time while stirring.
  6. When the dough has come together, add the soft butter and let it stir for 8 minutes.
  7. When the butter has been stirred into the dough, let it rise for an hour with a damp tea towel over it.
  8. After rising, turn the dough out onto a floured table.
  9. Divide the dough into 3 portions, which you roll out into a rectangle (approx. 0.5 cm high) and cut 6 – 8 triangular pieces per portion.
  10. Roll half or 1/3 of a sausage into each piece of dough.
  11. Spread the sausages on three baking trays and let them rise for 30-45 minutes under a damp tea towel (until they are the right size).
  12. When the sausage rolls have risen, brush them with beaten egg and sprinkle with sesame seeds.
  13. Preheat the oven to 220 C and bake the sausage rolls for 10-14 minutes, depending on size.
