Danish brown cookies with 03 Stout Spent Grain Flour

Skill level: Intermediate
Preparation time: 45 minutes (baking time - but the dough should ideally be refrigerated for a few hours)
Amount: 50-75 pieces

Ingredients

250 g butter

150 g sugar

250 g syrup

2 teaspoons baking soda

1 tablespoon water

400 g wheat flour

100 g 03 Stout Spent Grain Flour

2 teaspoons cinnamon

1 teaspoon ground cloves

50 g almonds (whole or chopped)

Here's how

  1. Heat the butter, sugar and syrup to boiling point. Dissolve the baking soda in the water and stir in. Cool the mixture until lukewarm.
  2. Mix the flour and spices in a separate bowl, sift and stir in with the almonds. Knead the dough well.
  3. Roll into approx. 5 cm thick bars. Wrap in baking paper and chill in a cool place - at least a couple of hours, but preferably until the next day.
  4. Cut into thin slices and place on a baking tray lined with baking paper.
  5. Bake for ca. 6 minutes at 175°C (top/bottom heat). ‍

Tip
If you have refrigerated the dough, take it out a little before you cut it. This will prevent the dough from crumbling when cutting.
